Thick and Rich Tomato and Basil Soup

Making homemade tomato soup recipes is actually much easier than you think, and this Thick and Rich Tomato and Basil Soup recipe from Adele of Vegie Head (www.vegiehead.com) will show you exactly how it is done. The basil adds the perfect amount of brightness to this easy tomato soup.

Serves4

Ingredients

  • 2 onions, diced
  • 2 garlic cloves, minced
  • 1 can diced tomatoes
  • 1 medium sweet potato, diced
  • 1 1/2 cup water
  • 1 tablespoon tomato paste
  • 2 roma tomatoes, quartered
  • 1 can cannelini beans rinsed and drained
  • Bragg Sprinkle Seasoning
  • Salt and black pepper, to taste
  • 1/4 cup fresh basil leaves, torn
  • 1/4 cup fresh parsley, torn

Instructions

  1. Saute onions and garlic for 3 to 4 minutes.
     
  2. Add diced tomatoes, water, sweet potato, tomato paste and roma tomatoes.
     
  3. Bring to a boil and simmer for 15 minutes or until sweet potato is soft.
     
  4. Using a stick blender or processor, puree until smooth. Process in batches, and be careful of the steam!
     
  5. Back in the pot, add the cannelini beans and simmer for another 5 minutes.
     
  6. Season with some salt and pepper, Braggs and add fresh herbs.
