  • 8 grape or cherry tomatoes, sliced in half
  • 2 tablespoons almonds, chopped
  • 1 tablespoon Parmesan cheese
  • 1/2 tablespoon medium pear, chopped
  • 1/2 yellow pepper, sliced
  • 1 tablespoon vinegar (for the dressing)
  • 1 1/2 tablespoon extra virgin olive oil (for the dressing)
  • 2 tablespoons extra virgin olive oil (for cooking)
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon sea salt

  1. In a skillet on medium flame, add 1 teaspoon of olive oil. Cook turkey sausage 7 to 10 minutes, turning throughout. After sausage cools, cut into circular pieces.
