Dutch Baby Pancakes

For a delicious twist on everyday easy pancake recipes, try this recipe for Dutch Baby Pancakes by E.G. Lewis. Instead of fried, you bake this simple pancake recipe in a cast iron skillet.

Ingredients

  • 1 cup flour
  • 2 tablespoons sugar
  • 1 cup milk
  • 3 eggs
  • 1 pinch salt
  • 1 pinch nutmeg

Instructions

  1. Put an iron skillet in a 425 degree F oven and let it heat.
     
  2. Meanwhile, whisk the eggs then combine and the milk and whisk until the eggs are dispersed.
     
  3. Add the other ingredients and whisk or beat until smooth.
     
  4. When your skillet is hot, carefully remove from the oven and quickly run a stick of butter around the bottom and sides.
     
  5. Pour in your batter and return to oven for 15 minutes. The edges should be crisp and brown when it comes out. Run a spatula around the edges and slip it out of the pan; dust with powdered sugar and top with fruit if desired.
