Lasagna has always been a funny joke in my family. The first time my mom made it, she didn't know she had to boil the noodles first (this was back in the days before no-boil noodles) and her lasagna was so crunchy. She has since perfected her recipe and technique but we still giggle at her first attempt. I never would have thought to use sweet potatoes in a lasagna! But, it does have all my fave elements in it so its worth giving a try. I will share this with my mom and see what she can make of it. )
