I don't really care for that vegan cheese substitute, so I would probably use a reduced fat Monterey jack or cheddar for these. Although it is not gluten free, the wheat tortillas really offer a much more wholesome and nutritious choice compared to the standard white flour tortillas. I love the mango avocado salsa, and plan to try this stuff on top of grilled fish or chicken the next time we fire up the grill!
