This soup is so packed with good for you veggies that you can eat as much of it as you want and don't have to feel guilty about it. I like a little kick to my soup as well, so I would definitely add either some crushed red pepper flakes or a generous dash of Frank's red hot sauce for brightness.

I've tried several recipes for this tasty, healthy and economical soup. I like to add extra red pepper flakes for more heat. White vinegar or lemon juice bring out and enhance the flavor. I have even made this soup with red cabbage. It makes a beautiful purple soup.
