Ingredients

  • 1 cup brown rice, cooked as package directs and cooled
  • 1 1/4 cup cheddar cheese, finely grated
  • 1/4 cup Parmesan cheese, finely grated
  • 5 large eggs
  • 2 cups broccoli florets, see note
  • 1/4 cup green onions, sliced
  • 1 pinch ground nutmeg
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 450 degrees F.

  2. Stir rice, 1/4 cup of the cheddar cheese, Parmesan cheese, and 1 egg together. Press into the bottom and sides of a 9-inch pie pan to 1/4-inch thickness. Bake this crust for about 7 minutes. The crust will just begin to brown.

  3. Meanwhile, beat the remaining 4 eggs with nutmeg, salt, and pepper.

  4. When crust is baked, lower oven temperature to 375 degrees F.

  5. On top of the crust, layer the broccoli, the remaining 1 cup of cheddar cheese, and onions.

  6. Pour the eggs over these ingredients.

  7. Bake for 35-40 minutes until the eggs are firm and top is golden brown.

  8. This quiche may be served immediately or at room temperature. Enjoy!

Notes

Fresh broccoli should be blanched. To do this, cut the broccoli into small pieces, and place into a large pot of boiling water for 2 minutes until it is bright green and just beginning to cook. Drop into a bowl of ice water until cool to the touch. Dry well on paper towels to remove any excess moisture.

You may use frozen broccoli - simply place into a colander and run water over it to thaw, then dry well on paper towels to remove any excess moisture.

Since brown rice takes so much longer to cook, I looked up the difference between brown ride and white rice. I was amazed at the difference in nutritional content. I loved that brown rice is a good source of magnesium, phosphorus, selenium, thiamine, niacin vitamin B6 and is high in fiber. I like that quiche is just as good for dinner as so breakfast !

This recipe was surprisingly really good. I'm not a huge fan of quiches, but I would definitely make this one again!

I loved the rice crust. It was something I had never tried before it really worked! The eggs really fluffed up nicely, too! I would make this for brunch.

The rice crust on this quiche was a bit disappointing because it wasn't as crispy as I had hoped. However, I did enjoy this quiche in general!

I loved how light and fluffy the eggs were, and the amount of cheese was just right. I'd eat this happily for breakfast or for dinner!

Great breakfast recipe! The rice was a great addition. It balanced the egg flavor so it wasn't overpowering.

This was delicious! It wasn't too "eggy" and the rice crust was really tasty. I've never tried that before, but it's such a cool idea!

Any "healthy" recipe should come with stats on calories, fat content, fiber, protein, etc.

Is this freezer friendly? Should I bake and then freeze? Sounds delicious!
