Zucchini is at it again! There it goes sneaking into recipes we'd never expect it to pop up in! This time it's in Healthy Zucchini Brownies. They're high in fiber, high in Vitamin C, and low in sugar. These brownies have all of those benefits in addition to being low in carbs and calories, and gluten-free. Is there a reason not to devour these brownies? Oh, they're also super easy to make. These brownies are so chocolatey and rich that nobody will even guess that they're good for you. They probably won't even notice the zucchini!

Applesauce and coconut oil replace butter, coconut flour and flaxseed replace all-purpose flour, and xylitol and pure stevia extract replace sugar. Per serving, these brownies have only 83 calories, 6.8 grams carbohydrates, and 0.6 grams sugar which makes this brownie recipe perfect for a low-carbohydrate and low-calorie diet.

As a health nut who loves desserts, this brownie recipe is truly a life saver. Often times, I feel like I limit what I eat because I'm trying to be fit and healthy. Although it's a good thing, I also just miss brownies! Using zucchinis as the base of your brownie is a great way to get your veggies in. And I'm sure it'll have that creamy, chocolate taste too!

I have a super delicious zucchini bread recipe, so I would really love to try these brownies! They sound delicious!
