I love how easy this looks! I'm getting hungry just looking at it, and you could easily leave out the meat for meatless Mondays!

This looks really good. It 's a nice twist on regular lasagna. I think I would prefer to substitute salsa for the taco sauce to increase the amount of vegetables in this dish. I love how colorful and cheery this dish looks with the cheese, avocados, olives and tomatoes. #BestIdeaEver.
