In the mood for a healthy fruit salad? Strawberry Almond Shrimp Salad is much more unique than your average salad. This dish combines a medley of fresh fruit, roasted shrimp and creamy goat cheese to create a flavor that is refreshing and delightful without completely ruining your diet. The addition of toasted almonds give this dish a little more crunch and texture, and gives it some more protein. This makes an excellent light lunch during any time of the year, but it's especially perfect for spring or summer.
