Ingredients

  • 1 pound boneless skinless chicken breasts, cut into strips
  • 1/4 cup Asian Toasted Sesame Salad Dressing (or a combination of sesame oil, orange juice and garlic)
  • 1/4 cup orange juice
  • 3 cups stir-fry vegetables, frozen or fresh
  • 3 cups brown rice, cooked
  • 1/4 cup peanuts or cashews, chopped

Instructions

  1. Cook chicken in large nonstick skillet on medium-high heat for 5 - 7 minutes, or until cooked through. (you can add some chicken broth to make the chicken moister).
     
  2. Stir in dressing and juice. Bring to a boil.
     
  3. Add vegetables. Cook 5 - 7 minutes, or until heated through, stirring occasionally.
     
  4. Serve over rice. Sprinkle with nuts as as garnish if desired.
