Healthy and Easy Chicken Casserole

This healthy baked chicken recipe has some rich and delicious flavor that will please the whole family. They won't even know that what they are eating is better for them than a traditional casserole! A healthy and easy chicken casserole recipe is definitely something to keep nearby.

Ingredients
  • 1 1/2 pounds boneless and skinless chicken breast
  • 1 pound reduved fat velveeta cheese
  • 1 can of diced Rotel tomatoes
  • 1 can of low sodium cream of mushroom soup
  • 1 can of low sodium cream of celery soup
  • 10 ounces large wheat elbow macaroni
Instructions
  1. Boil chicken breast in large pan. Remove chicken from pot, keeping boiling broth.
     
  2. Boil noodles in low sodium broth.
     
  3. While noodles are cooking, combine remaining ingredients in another pan and bring to a slow boil.
     
  4. Add the cooked noodles and shredded chicken.
     
  5. As a last step, pour mixture into a baking dish, add shredded reduced fat cheddar cheese and fresh parsley and bake at 350 degrees F for 5-10 minutes until cheese is well melted.
