Pasta Salad Mediterranean

Loving salads is always a good thing since it's healthy for you. Try a different kind of salad - a Mediterranean pasta salad.

Ingredients

  • 6 to 8 servings of pasta, cooked and drained (penne, rigatoni, bows)
  • Cucumber, chopped (to taste)
  • Red onion, sliced or chopped
  • Mixed green and black brine cure olives, pitted
  • Sundried tomatoes, softened or fresh ripe tomatoes, chopped
  • Fresh basil leaves
  • Fresh feta cheese, crumbled
  • Marinated artichoke hearts, chopped

Instructions

  1. To create the salad, simply combine all of the ingredients in a bowl or another container.
     
  2. Chill well and stir before serving.
     
  3. Dressing: either liquid from the marinated artichokes to moisten well or splash on extra virgin olive oil, red wine vinegar, minced garlic, salt and fresh grated black pepper.
