Baked Orange Chicken

Simple chicken dishes rarely taste as good as Orange chicken. Instead of frying, make healthy chicken dishes using your oven. For moist boneless chicken breast and a healthy meal, try this recipe.

Notes

One does not have to flame the chicken. If you wish, use the remaining 1/4 cup orange liquor to baste the roasting chicken.

Ingredients

  • 1/2 cup celery, chopped
  • 1/2 cup onion, chopped
  • 1/2 cup butter substitute
  • 4 cup day old whole-wheat bread cubes for stuffing
  • 1/2 cup pecans, chopped
  • 1 teaspoon salt
  • 1 teaspoon poultry seasoning
  • 1/2 teaspoon pepper
  • 1/2 cup orange liquor, divided
  • 1 orange, peeled sectioned and chopped
  • 1 fresh 5-pound chicken

Instructions

  1. In a large skillet, saute the onion and celery with the butter or margarine until soft.
     
  2. Mix in bread cubes, pecans, seasonings, 1/4 cup orange liquor and fresh chopped orange.
     
  3. Sprinkle chicken inside and out with salt and pepper. Stuff chicken with the prepared stuffing mixture.
     
  4. Bake on a preheated 400 degree F oven about 2 1/2 hours or until chicken is done and tender. Remove chicken to serving platter.
     
  5. Warm remaining 1/4 cup orange liquor, Ignite and pour over chicken. When flame dies, serve immediately.
