Cold Sun Dried Tomato Bisque

This chilled tomato bisque is perfect for hot summer days. With a touch of sweetness from sun-dried tomatoes and smokiness, this is no ordinary tomato soup.

Cooking Time: 5 min

  • 2 cups water
  • 2 cups V8 juice
  • 1/2 medium onion
  • 1/2 teaspoon ground garlic
  • 1 teaspoon dried dill
  • 1/4 teaspoon pepper
  • 2 ounces sliced sun-dried tomatoes
  • 1 tablespoon liquid smoke
  • 1/2 cup skim milk
  1. Bring 2 cups of water to boil in sauce pan, add tomatoes.
  2. Cover, reduce heat and simmer 3-5 mins. Drain water off.
  3. Cover tomatoes with cool water, soak for about 5 mins, drain.
  4. Put tomatoes, 1 cup juice, onion, garlic, dill weed, pepper and smoke in container of electric blender; process until smooth; add remaining 1 cup of v-8 juice.
  5. Add milk, process until blended. Chill thoroughly or over night.
