Mango Grilled Chicken Salad

For a light and healthy salad that works perfectly as an easy weeknight meal, give this easy healthy chicken salad recipe courtesy Del Monte Foods a try. Mangoes add a sweet and juicy flavor to this healthy chicken recipe.

Serves: 6

Preparation Time: 20 min

Ingredients
  • 3 cups grilled chicken, diced
  • 1 cup celery, diced
  • 1 cup red pepper, sliced
  • 1 cup green pepper, sliced
  • 1/4 cup green onions, chopped
  • 1/2 cup light mayonnaise
  • 1/2 cup low-fat plain yogurt
  • 1 tablespoon honey
  • 1 teaspoon lime peel, grated
  • 2 tablespoons fresh lime juice
  • 1/4 to 1/2 teaspoon cayenne pepper, to taste
  • Baby spinach
  • 1/2 cup cashews
  • 1 20-ounce jar Del Monte® SunFresh® Sliced Mangos, drained
Instructions
  1. Combine chicken, celery, peppers and onions in bowl.
     
  2. Blend together mayonnaise, yogurt, honey, lime peel, lime juice and cayenne in small bowl.
     
  3. Toss dressing with chicken mixture; chill.
     
  4. Arrange chicken salad over a bed of baby spinach. Arrange fruit around chicken mixture. Sprinkle with cashews. Garnish with additional green onions and lime wedges, if desired
