Easy Vegan Christmas Pudding

(1 Votes)

Celebrate a vegan Christmas with this fast easy vegan recipe. Quick and easy vegan recipes is not synonymous with bland and dull, and this sweet recipe is proof of that.

  • 1 cup soft bread crumbs
  • 1 cup seedless raisins
  • 1 cup currants
  • 1 cup dates, chopped
  • 1/2 cup candied citron peel or dried cranberries, chopped
  • 1/2 cup walnuts, chopped
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1/4 teaspoon allspice
  • 1/2 cup vegan margarine
  • 1/2 cup brown sugar
  • 1/3 cup molasses
  • 1 cup soy milk
  1. Prepare and mix together bread crumbs, raisins, currants, dates, citron peel and walnuts; dust with a small amount of flour.
  2. Stir flour, baking powder, baking soda, salt, and spices together.
  3. Cream margarine and sugar together well. Add gloop, beating well. Blend in molasses. Add soy milk alternately with dry ingredients. Fold in the fruit, nut, and bread crumb mixture.
  4. Fill a greased 1 1/2 quart pudding bowl or individual moulds 2/3 full; cover tightly. Steam three hours or until done for large mold; 1-2 hours for small molds.

The pudding can be stored in the refrigerator almost indefinitely if you dribble rum, sherry, or any other form of alcohol over it from time to time. This pudding is meant to be lit on fire just before it is served, although the non-alcoholic version is also very good. Steam the pudding for an hour to heat it up before serving.

what is gloop in step3????

Hi Mario, The gloop is referring to the margarine and sugar mixture. Please add it to the ingredients that were combined in steps 1 and 2.
