Low Fat Baked Crab and Pears

Low fat baked crab and pears is a different kind of dish that will deliver unique flavors. Try this fresh pear recipe and you'll start making it all the time. Your friends will be impressed with this creative meal.

Ingredients
  • 3 large, firm pears
  • 7/8 cup of non-fat mayonnaise (1 cup less 1 Tablespoon)
  • 1 large egg yolk
  • 6 ounces crab meat (jumbo lump)
  • 1/4 cup peeled and seeded cucumber
  • 3 thin and minced scallions
  • 1 teaspoon minced fresh ginger
  • salt to tatse
  • 3/4 cup of fresh lemon juice
  • 2 teaspoons of curry powder
  • pepper to taste
  • Paprika sprinkled on top for decoration
  • Parsley for decoration
Instructions
  1. Peel the pears, slice in half lengthwise, and remove core from the center.
     
  2. Poach pears with lemon juice until they are barely tender. Cool for five minutes.
     
  3.  Whisk the mayonnaise, egg yolk, curry powder, salt and pepper in a large bowl.
     
  4. Combine the crab meat, cucumbers, scallions and the ginger root in another bowl.
     
  5. Carefully add half of the mayonnaise mixture into the crab mix (be careful not to break the crab meat). Once combined, add in the rest of mayo mixture.
     
  6. Fill pears with the crab mixture: put in a low-sided pan at 350 degrees F and bake until crab starts to brown on top.
     
  7. For garnish, decorate with paprika and parsley when served.
