Sage Chicken

Since this Sage Chicken is briefly browned in a bit of hot oil, it had the crispy texture of fried chicken, but it finishes cooking in an oven, so it doesn't get all the grease and calories that traditional fried chicken does.

Ingredients
  • 1 1/4 cups flour
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon pepper
  • 4 whole chicken legs and thighs
  • 2 teaspoons oil
  • 2 teaspoons margarine
  • 1 teaspoon baking powder
  • 1 teaspoon sage
  • 3 eggs, or egg substitute
  • 1 1/2 cups skim milk
Instructions
  1. Mix 1/4 cup flour with 1/2 teaspoon salt and pepper.
     
  2. Dredge chicken in flour mixture. Heat oil and margarine in frying pan over medium heat; add chicken and brown.
     
  3. Transfer chicken and drippings to 9 X 13 baking dish. Preheat oven to 350 degree F.
     
  4. Stir remaining 1 cup flour, 1 teaspoon salt, baking powder, and sage. Then in blender, beat eggs. Blend in milk.
     
  5. Add dry ingredients to egg mixture and beat until smooth. Pour over chicken.
     
  6. Bake uncovered for 1 hour or until puffy and brown.
