Ingredients
- 1 whole roasting chicken
- 1 1/2 tablespoon olive oil
- 4 tablespoons lemon juice
- 2 whole lemons
- Salt and black pepper, to taste
- Dried basil
Instructions
- Mix together the olive oil, juice of two lemons , salt and black pepper. Rub this mixture into the chicken parts.
- Place the bird onto a greased oven pan and sprinkle basil liberally on both sides. Stuff the chicken cavity with lemons, sliced in half.
- Bake at 400 degrees F for about 1 hour and 30 minutes, or until cooked all the way through. Cooking times vary depending on the thickness of the chicken.
