Tex-Mex Potato Salad with Chicken

Fresh vegetables and a dusting of chili powder are all you need to make a Tex-Mex Potato Salad with Chicken. Following your healthy weight loss diet is simple with this easy chicken salad recipe.

Ingredients

  • 2 ripe tomatoes, chopped
  • 3/4 cup green onions, chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons fresh jalapeno peppers, chopped
  • 1 cup low fat mayonnaise or fat free salad dressing
  • 3 tablespoons fresh lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 2 pounds small red potatoes with skin, cooked and sliced 1/4 inch thick
  • 2 cups cooked chicken without excess skin or fat, shredded
  • 1 large red bell pepper, diced

Instructions

  1. In a bowl, combine the tomatoes, onions, fresh cilantro and jalapeno peppers. Mix well, set aside.
     
  2. In small bowl, combine the low fat mayonnaise or fat free salad dressing, fresh squeezed lime juice, chili powder and cumin; mix well.
     
  3. In a third bowl, combine the potatoes with skin, chicken without excess fat or skin, and red bell pepper and stir.
     
  4. Toss with the low fat mayonnaise dressing and the tomato mixture.
     
  5. Cover and chill for at least 1 hour. Serve with low sodium tortilla chips, if desired.
