Vegetarian Tempeh Jambalaya

Ingredients

  • 1 teaspoon extra virgin olive oil
  • 1 yellow onion, finely chopped
  • 1 cup celery, chopped
  • 1 cup green bell pepper, chopped
  • 1 cup mushrooms, sliced
  • 2 garlic cloves, minced
  • 8 ounce tempeh, diced
  • 3 cup fresh tomatoes, chopped
  • 2 cup water
  • 1 cup long grain brown rice
  • 3 tablespoon reduced sodium soy sauce
  • 1 tablespoon fresh parsley, minced
  • 1/4 teaspoon salt
  • 1/8 tablespoon chili powder
  • 1/8 teaspoon ground black pepper

Instructions

  1. Heat oil in a large non-stick skillet over medium-high heat.
     
  2. Add onion, celery, green pepper, mushrooms, and garlic, and sauté until tender.
     
  3. Stir in the remaining ingredients and transfer to a 2 1/2 quart baking dish coated with nonstick cooking spray.
     
  4. Cover and bake at 350 degrees F for 65to 70 minutes, or until rice is tender and liquid is absorbed.
