"If you want to have a really delicious recipe to hold on to for any or no occasion, please check out my recipe for baked potato latkes (pancakes). My recipe is so simple and easy with only a handful of ingredients. Everyday ingredients, nothing fancy. You probably have what you need in your pantry and fridge already. Now, this easy and oh so delicious recipe for baked potato latkes (pancakes) is a little bit different than the usual recipe you’ve probably seen and tasted in the past. My potato latkes/pancakes are baked and not fried. The reason for this is, first of all, it’s a healthier way of enjoying a family treat without having my entire house smell like grease. I know, there are so many of you probably thinking I’m making a big deal about this but, it just takes so long to get the “fried” to go away. Well, the most important reason for baking and not frying these beauties is they seriously taste so delicious and very close to what a fried potato latke or pancake tastes like. I hope you give my version a try, they truly turn out so good! Just a note...I serve with applesauce, some folks like sour cream. So, you decide or try both!"
