Simple Grilled Italian Vegetables

This grilled fresh vegetables recipe will brighten any meal. For delicious seasonal flavor, try this recipe for outdoor grilled vegetables.

Ingredients

  • 2 medium zucchini, cut lengthwise
  • 2 medium yellow squash cut lengthwise
  • 2 red bell peppers, cut into 16 strips
  • 2 tablespoon low fat Parmesan cheese
  • 2 tablespoon olive oil
  • 1 teaspoon Italian seasoning

Instructions

  1. Combine cheese, oil and Italian seasoning in container larger enough to place vegetables in.
     
  2. Place vegetables in dish with mixture and lightly coat both sides.
     
  3. Place on edge of grill or in grilling basket and grill for 10 to 15 minutes. Turn occasionally.
