Easy Mashed Sweet Potatoes

Mashed potatoes are a classic dish. This quick and easy recipe is a healthy take on the classic dish, with less fat and more nutrients than the traditional version.

Ingredients

  • 4 sweet potatoes
  • 2 medium purple onions, coarsely chopped
  • 1/2 cup butter substitute
  • 1 teaspoon salt
  • 1/2 teaspoon red pepper, ground
  • 2 tablespoon light maple syrup
  • 1 tablespoon lemon juice
  • 1 teaspoon cinnamon, ground
  • 1 teaspoon cumin, ground
  • 1/2 cup pecans, chopped and toasted

Instructions

  1. Peel and cube sweet potatoes.
     
  2. Combine sweet potatoes, onions and butter substitute in a lightly greased 11 x 7-inch or shallow 2-quart baking dish; sprinkle with salt and red pepper.
     
  3. Bake, covered, at 375 degrees F for 40 to 45 minutes or until potato is tender. Remove from oven.
     
  4. Add syrup,lemon juice, cumin and cinnamon; mash, leaving a few lumps.
     
  5. Sprinkle with pecans.
