If you're not familiar with potato latkes, they're basically delicious pancakes made with shredded potatoes. The same process can be used to make scrumptious Carrot Fritters. This easy vegetarian recipe only uses six ingredients and completely transforms carrots. When they're cooked, the sugars caramelize and they develop a crispy and sweet outer crust. They're perfect on their own or served with a dollop of thick and tangy Greek yogurt on top. These vegetable fritters make a wonderful snack or side dish when you want to use up leftover carrots you might have on hand.
