Vegan Peanut Butter Blondies

Ingredients

  • Blondies:
  • 3/4 cup natural peanut butter
  • 1/3 cup Earth Balanceâ„¢ (vegan butter alternative), softened
  • 1/4 cup unsweetened applesauce
  • 1/4 cup unsweetened almond or soy milk (vanilla or plain)
  • 1/2 cup organic brown sugar
  • 2/3 cup NuNaturals Nustevia Sweetenerâ„¢ Baking Blend, or their MoreFiberâ„¢ Baking Blend
  • 1 1/4 cup whole wheat pastry flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • Chocolate Ganache:
  • 3/4 cup vegan chocolate chips
  • 1/3 package (4 ounce) extra firm silken tofu
  • 1/2 teaspoon vanilla extract
  • 1 splash almond or soy milk, if needed

Instructions

  1. Preheat oven to 350 degrees F.
     
  2. In a large bowl, cream together peanut butter and Earth Balance™. Add in brown sugar, NuNaturals NuStevia Sweetener™,vanilla, applesauce and milk, and beat until fluffy.
     
  3. In a smaller bowl, combine flour, baking soda, baking powder, and salt.
     
  4. Add a little at a time to the peanut butter mixture until incorporated.
     
  5. Spread the mixture in the bottom of an 8-inch by 8-inch pan that has been sprayed with cooking spray. Bake for 20 minutes.
     
  6. Meanwhile, melt chocolate chips in the microwave or in a double boiler. Cream melted chocolate with tofu, vanilla and milk, if needed.
     
  7. Let blondies cool entirely before spreading with the chocolate ganache and cut into squares.
     
  8. Keep refrigerated.
