Vegan Almond Joy Cookie Bars

Ingredients

  • 1 cup whole wheat pastry flour
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1/2 cup unsweetened shredded coconut (can substitute sweetened)
  • 1/2 cup oats
  • 1/2 cup almonds, chopped
  • 1/2 cup dark chocolate chips
  • 1/4 cup organic sugar, or 3/4 cup organic sugar if not using Stevia Baking Blend
  • 1/2 cup NuNaturals NuStevia Sweetenerâ„¢ Baking Blend, or their MoreFiberâ„¢ Baking Blend
  • 1/4 cup almond butter
  • 1/4 cup unsweetened applesauce
  • 1/4 teaspoon almond extract
  • 1/4 teaspoon coconut extract
  • 2 tablespoon agave
  • 2 teaspoon almond milk

Instructions

  1. Preheat oven to 350 degress F.
     
  2. Spray an 8-inch by 8-inch pan with cooking spray and set aside.
     
  3. In large bowl, combine flour, baking soda, salt, coconut, oats, almonds, and chocolate chips.
     
  4. In smaller bowl, mix remaining ingredients.
     
  5. Add wet mixture to dry, stir until combined.
     
  6. If mixture appears dry, add a splash more of almond milk
     
  7. Spread dough into bottom of pan and bake 20-25 minutes, until set and golden brown around edges.
     
  8. Let cool before cutting into bars.
