Homemade Cheddar Broccoli Soup

Sometimes all you need is just a warm bowl of soup. Try this simple, cheesy soup recipe, which will be perfect to make on a bad weather day. Ingredients

  • 1/2 cup cup finely chopped onion
  • 1/4 cup butter
  • 1/4 cup flour
  • 2 cup whole milk
  • 3 cup chicken stock
  • 2 cup medium cheddar cheese, grated. Tillamook cheddar recommended
  • 1 pound steamed broccoli, cut into a large chop

Instructions

  1. Saute onions in butter till tender.

  2. Add flour and cook a couple of minutes. Add milk and chicken broth, stirring constantly until thickened. Start with 3 cups of broth and add more if the soup gets too thick.

  3. Season with salt, pepper and a dash of cayenne pepper. Add grated cheese and stir until melted. Add broccoli and stir. Add a dash of paprika for a little color.
