Veggie Garden Coleslaw

Forget your old coleslaw recipe; this is how to make coleslaw well. Veggie Garden Coleslaw is a no mayo coleslaw recipe packed with 6 vegetables and herbs and seasoned with hints of caraway, honey, apple cider vinegar, mustard, and soy sauce.

Ingredients

  • 2 tablespoon balsamic vinegar
  • 6 tablespoon apple cider vinegar
  • 2 tablespoon dijon mustard
  • 1 tablespoon low-sodium soy sauce
  • 2 teaspoon honey
  • 1/2 teaspoon celery seed
  • 1/2 teaspoon caraway
  • 1/4 teaspoon freshly ground pepper
  • 2 cup green cabbage, shredded
  • 2 cup red cabbage, shredded
  • 1 carrot, julienned
  • 1/2 green pepper, thinly sliced
  • 1/2 yellow pepper, thinly sliced
  • 1/4 cup green onions, thinly sliced
  • 1/4 cup fresh parsley, finely chopped

Instructions

  1. Whisk balsamic vinegar, apple cider vinegar, dijon mustard, soy sauce, honey, celery seed, caraway, and pepper together in a small bowl. Set aside.
     
  2. Toss green cabbage, red cabbage, carrot, green pepper, yellow pepper, green onions, and parsley in a large bowl.
     
  3. Pour dressing over slaw and mix until coated evenly.
     
  4. Allow slaw to marinate for at least 1 hour in the refrigerator before serving.
