Sunflower Slaw

Looking for a no mayo coleslaw recipe that doesn't compromise flavor? Try this Sunflower Slaw, which uses a tangy, healthy coleslaw dressing featuring lemon juice, honey, and cider vinegar. Toasted sesame and sunflower seeds add a nutty crunch!

Notes

You may allow the flavors to blend for a day or two in the refrigerator before serving.

Ingredients

  • 1/4 cup sunflower seeds
  • 1/8 cup sesame seeds
  • 8 cup green cabbage, finely shredded
  • 1/2 cup red bell pepper, finely chopped
  • 3 tablespoon light vegetable oil
  • 2 teaspoon lemon juice
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey
  • 1 teaspoon artificial sweetener (try an equivalent amount of agave nectar)
  • fresh ground pepper to taste
  • salt to taste

Instructions

  1. Toast sunflower and sesame seeds in a dry skillet or toaster oven over medium heat. Stir or shake often. Seeds will brown and start to pop in about 2 to 3 minutes.
     
  2. Combine toasted seeds with cabbage and red pepper.
     
  3. Blend cabbage mixture with vegetable oil, lemon juice, apple cider vinegar, honey, and agave. Stir to coat and salt and pepper to taste.
