"Lentil Sundried Tomato Salad is incredibly fast and easy to make with only 5 ingredients. It’s vegan, gluten-free, and healthy. All you need are cooked lentils, sliced sundried tomatoes in olive oil, lemon juice, garlic, and parsley. The olive oil from the sundried tomatoes becomes the dressing along with the lemon juice. You can serve this lentil salad on a bed of greens such as chopped Romaine lettuce or baby spinach or arugula. It lasts for days in the refrigerator."
