Asian Coconut Chicken Salad

You can serve this Asian Coconut Chicken Salad as an easy weeknight meal, bring it to a potluck supper or picnic, or eat the entire bowl yourself. It is truly that amazing. Every single ingredient in this chicken salad recipe is so refreshing that you'll be craving it from your last forkful. It's also a phenomenal make ahead salad, so it's perfect for parties or when you need the oven for other things.

Ingredients

  • 1/4 cup + 2 tablespoons coconut milk
  • 1/2 tablespoon red curry paste (such as Thai Kitchen)
  • 1 tablespoon fresh lime juice (approximately 1/2 lime)
  • 2 cooked chicken breasts, diced
  • 1 1/2 cup coleslaw mix or shredded cabbage
  • 1/4 cup toasted peanuts
  • 3 green onions
  • salt & pepper to taste

Instructions

  1. In a liquid measuring cup, whisk together the coconut milk, red curry paste, and lime juice

  2. In a medium bowl, toss together chicken breasts, coleslaw mix, peanuts and green onions.

  3. Pour dressing into the bowl and gently combine all ingredients.

  4. Season with salt and pepper to taste.
