Oma's Traditional German Potato Salad

This recipe from my oma is one of those classic potato salad recipes that you will always love.  Of course, Oma used real bacon in her original recipe. So if you want to make it a bit healthier, you can use bacon bits like Bac-Os. This way, you'll reduce a bunch of the fat from this potato salad recipe without getting rid of that classic bacon taste. Make this delicious side dish for your next picnic or cookout, and everyone will be asking you for Oma's fantastic potato salad recipe.

Ingredients

  • 4 potatoes
  • 4 slices bacon OR 1/2 cup fake bacon bits, such as Bac-Os
  • 1 tablespoon all-purpose flour
  • 2 tablespoon white sugar
  • 1/3 cup water
  • 1/4 cup white wine vinegar
  • 1/2 cup chopped onions
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil. Add potatoes; cook until tender but still firm, about 15 minutes. Drain, cool, and chop.
     
  2. If you use real bacon, place it in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.  If you are not using bacon, skip this step.
     
  3. Add the flour, sugar, water and vinegar to skillet and cook in 1 teaspoon of vegetable oil over medium heat until dressing is thick.
     
  4. Add bacon or fake bacon bits, potatoes, and onions to skillet and stir until coated.
     
  5. Cook until heated and season with salt and pepper. Serve warm.
