Ingredients

  • For the Crust:
  • 2 cup organic oats, ground into a flour
  • 1/2 cup coconut oil, melted
  • 2 tablespoon cacao powder or cocoa powder
  • 4 tablespoon sucanat or cane sugar
  • 1/4 teaspoon sea salt
  • 3 tablespoon dried, unsweetened coconut flakes
  • For the Coconut Cream:
  • 1 can organic coconut milk (refrigerated overnight or for at least 12 hours)
  • 1 teaspoon vanilla or vanilla bean scraped from one pod
  • 1/4 cup agave, maple syrup or honey
  • 1/4 cup coconut oil, melted but do not use while warm-wait a few minutes until it has cooled but not solidified
  • For the Layers:
  • 2 Bananas, sliced
  • 1 cup Fresh pineapple chunks
  • 1 cup strawberries, sliced
  • 1 cup non dairy chocolate chips, melted
  • 2 tablespoon dried coconut flakes

Instructions

  1. In a food processor, add ground oats, cocoa powder, sea salt, coconut flakes, and sucanat or sugar and process. While food processor is going add in melted coconut oil and process until dough forms. Press dough into the greased springform pan or baking dish. Place in freezer for 10 minutes while working on next step.

  2. Open can of refrigerated coconut milk and scrape the solid coconut milk from container. Leave the water in the bottom and use for a smoothie or discard. Add in vanilla, agave or other sweetener, and blend with a whisk or beaters. Add in cooled coconut oil and blend. Spread this onto pie crust. Place in freezer for 10 minutes to harden up. The coconut cream filling will not get completely stiff but it will become firm enough to hold the toppings.

  3. Add a layer of bananas on top of the cream. Add a layer of pineapple. Add a layer of strawberries. Drizzle melted chocolate over entire pie and sprinkle with coconut flakes before chocolate hardens. Place in freezer for 10 minutes to harden chocolate. Store the pie covered in plastic wrap in the refrigerator for up to 3 days if it lasts that long!
