Billy's Baked Macaroni and Cheese

Billy knows a lot about the best macaroni and cheese recipes. He has made this recipe specifically to be healthy as well as delicious. This recipe for baked macaroni and cheese will have the whole town screaming for joy. Billy know his macaroni!

Ingredients

  • 2 cup uncooked elbow macaroni
  • 1/2 cup butter substitute
  • 1/2 cup unbleached flour
  • 1 1/2 cup fat free milk
  • 1 1/2 cup low fat sour cream
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 10 ounce bar mild low fat Cheddar cheese, grated

Instructions

  1. Preheat oven to 350 degrees F.
     
  2. Cook macaroni in lightly salted boiling water according to package directions.
     
  3. Drain and rinse with cold water. Pour into a 3 quart casserole dish. 
     
  4. In a saucepan, melt butter substitute and stir in the unbleached flour. Gradually stir in fat free milk and low fat sour cream.
     
  5. Add salt and pepper. Cook over low heat, stir constantly until sauce thickens.
     
  6. Reserve one cup grated low fat cheese for the top of the casserole. Toss macaroni with remaining low fat cheese.
     
  7. Pour sauce over macaroni and mix thoroughly. Sprinkle with the cheese that is left.
     
  8. Bake for one hour, or until light brown.
     
  9. Serve immediately.
