Whole Wheat Apple Date Muffins

Ingredients

  • 2 1/4 cup whole wheat flour
  • 1 1/2 teaspoon baking soda
  • 1/3 cup brown sugar, packed
  • 3/4 cup buttermilk, nonfat
  • 1 1/2 cup apples, finely chopped
  • 3 tablespoon liquid egg substitute
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped dates

Instructions

  1. Preheat oven to 350 degrees F. Coat muffin cups with nonstick cooking spray.
     
  2. Combine the flour, baking soda and brown sugar; stir to mix well.
     
  3. Add the buttermilk, apples, egg substitute and vanilla extract; stir just until the dry ingredients are moistened. Fold in the dates.
     
  4. Fill the muffin cups 3/4 full with the batter. Bake for 16 to 18 minutes, or just until a toothpick inserted in the center comes out clean.
     
  5. Remove the muffin tin from the oven and allow it to sit for 5 minutes before removing the muffins. Serve warm or at room temperature.
