Walking Tacos with Doritos

Made with Doritos, this low calorie meal is great for a busy weeknight dinner that is not only budget friendly, but also healthy. Walking Tacos with Doritos is packed with cheesy Doritos, ground turkey, and delicious taco seasonings. Topped with Cheddar cheese, tomatoes and lettuce, it's a taco in a bag.

Serves5 (1 bag with filling)

Ingredients

  • 5 100-Calorie bags of Doritos
  • 8 ounce lean ground turkey
  • 2 teaspoon olive oil or grapeseed oil
  • 1/4 cup fresh chopped tomato
  • 1/4 cup fresh chopped bell pepper (any color)
  • 1 tablespoon reduced-sodium taco seasoning
  • pinch crushed red pepper if desired
  • 1 tablespoon water
  • 2/3 cup fresh diced tomato
  • 1 cup shredded lettuce (romaine or other dark variety if possible)
  • 1/3 cup Cheddar cheese, shredded
  • 2 teaspoon fat-free sour cream

Instructions

  1. Heat medium saucepan, and add the oil to it

  2. Add the ground turkey, onion, and bell pepper. Sautee until meat is no longer pink.

  3. Add water, ground red pepper, and taco seasoning. Stir until turkey is cooked through.

  4. Remove from heat.

  5. Open bags of Doritos. (Crush chips if first if desired)

  6. Put shredded lettuce, then turkey mixture, then tomato, then cheese, then sour cream directly into the bags of Doritos. Grab a plastic fork, and you’re ready to go!
