Simple Fun Easter Cake

Looking for a recipe for Easter cakes that is easy to make and super fun to eat? Then give this fun Easter recipe a try. Just goes to show that a delicious cake recipe does not have to be difficult to make.

Ingredients

  • 6 ounce sugar substitute
  • 10 ounce white whole wheat flour
  • 4 ounce butter substitute
  • 4 egg whites, or egg substitute equivalent to 2 eggs
  • 2 ounce walnuts, chopped
  • 1 pinch salt
  • 1 teaspoon baking powder
  • 15 ounce skim milk
  • chocolate icing (recipe below)
  • small sugar-free Easter candies, for decoration

Instructions

  1. Preheat oven to 350 degrees  F.
     
  2. Combine sugar substitute and butter substitute until creamy; beat in each egg white, one at a time.
     
  3. Blend in flour, salt and baking powder. Add walnuts and skim milk.
     
  4. Pour in to prepared pan and bake for an hour or until firm to touch.  
     
  5. Cool completely before frosting.

 

Icing

  • 3 ounces sugar-free powdered chocolate drink mix
     
  • 10 ounces water
     
  • 10 ounces icing sugar
  1. Stir the chocolate and water together in a saucepan and bring to a boil; let boil for 2 minutes.
     
  2. Stir in the sugar and let dissolve.  
     
  3. After iced cake has set, decorate with sugar-free Easter candies if desired.
