Low Calorie Crunchy Strawberry Jello

Ingredients

  • 2 cup pretzels, crushed
  • 3/4 cup margarine or butter, softened
  • 1 cup and 3 tablespoons sugar
  • 8 ounce low fat cream cheese
  • 8 ounce Lite Cool Whip
  • 2 cup boiling water
  • 1 (6-ounce) packages sugar-free strawberry Jell-O
  • 1 (20-ounce) package frozen strawberries (if whole, slice in halves)

Instructions

  1. Preheat oven to 400 degrees F.
     
  2. Mix crushed pretzels, 3 tablespoons sugar and margarine or butter.
     
  3. Press mixture in Pyrex Baking Dish, 13" x 9" x 2" or 12" x 8" x 2".
     
  4. Bake for 10 minutes; cool.
     
  5. Beat 1 cup sugar, cream cheese and Lite Cool Whip; add to cooled pretzel layer.
     
  6. Mix boiling water with Jell-O; add strawberries. Let stand 10 minutes; add to casserole.
     
  7. Chill 1 hour. Store in refrigerator.
