Lemon Chicken Pasta Salad

Lemon Chicken Pasta Salad is the perfect light lunch that will satisfy your appetite without ruining your diet. This healthy deli salad is creamy, comforting and bursting with refreshing flavors in every bite. This recipe calls for Greek yogurt instead of mayonnaise, which automatically lightens up a traditionally heavy dish and cuts out many unnecessary calories. It is super simple to make and it's a great way to get rid of any leftover rotisserie chicken. You can make this any time throughout the year, but it's the perfect dish to pack for a picnic.

Ingredients

  • 8 ounce whole wheat Rotini pasta
  • 1/2 cup non-fat Greek yogurt
  • 1 cup light mayonnaise
  • 2 tablespoon lemon juice or the juice of one small lemon
  • 2 tablespoon lemon zest
  • 2 tablespoon capers, drained
  • 2 cup chopped or shredded cooked rotisserie chicken
  • 6 large basil leaves, torn into pieces (optional)

Instructions

  1. Cook pasta in boiling, salted water according to package instructions, drain and add to a large non-reactive (glass) mixing bowl.

  2. In separate, smaller glass mixing bowl, combine Greek yogurt, mayonnaise, lemon juice, lemon zest and capers.

  3. Pour sauce over pasta and add cooked chopped/shredded chicken.

  4. Add basil and gently toss to combine.

  5. Serve immediately if serving warm or refrigerate 2 hours, if serving cold.
