Christmastime Cupcakes

Ginger, cinnamon and applesauce give these Christmastime Cupcakes a classic gingerbread taste that you will absolutely love. Plus, this cupcake recipe is naturally fat free, making it one of the healthier homemade cupcake recipes.

Ingredients

  • 1 cup whole wheat flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon baking soda
  • 1 dash salt
  • 1 egg white, beaten slightly
  • 1/3 cup real maple syrup
  • 1/3 cup water
  • 2 tablespoon all natural applesauce

Instructions

  1. Preheat your oven to 350 degrees F. Line 8 muffin cups with paper bake cups.
     
  2. In medium bowl, stir together the flour, baking powder, ginger, cinnamon, baking soda and salt. In a separate small bowl, thoroughly combine the egg white, maple syrup, water and applesauce.
     
  3. Dump the egg white mixture in the flour mixture and stir till completely blended.  Spoon mixture into muffin cups.
     
  4. Bake for 15 to 20 minutes; sprinkle with powdered sugar if desired.
