Lemon Pepper Slow Cooker Chicken

Cooking MethodSlow Cooker

Ingredients

  • 3 chicken breasts (although thighs would probably be better)
  • 1 cup dry white wine
  • 2 cup gluten free chicken broth
  • 2 tablespoon Dijon mustard
  • 2 sprigs of fresh rosemary (you can substituted dried if desired)
  • 2 sprigs of fresh thyme (you can substituted dried if desired)
  • 1 tablespoon garlic, chopped
  • 5 tablespoon lemon pepper
  • 2 cup rice
  • 1/2 package frozen peas
  • 2 tablespoon olive oil
  • 2 tablespoon champagne vinegar
  • 2 tablespoon honey

Instructions

  1. Combine the chicken, wine, broth, mustard, rosemary, thyme, garlic, and 3 tablespoons lemon pepper in the slow cooker.
     
  2. Cook on low for 7 hours.
     
  3. When the chicken is almost done, separately cook 2 cups rice according to package directions.
     
  4. When the rice is just about done, add the frozen peas. Cover and continue to simmer until the peas warm up and the rice is fully cooked.
     
  5. Make a vinaigrette by whisking together the oil, vinegar, honey, and rest of the lemon pepper.
     
  6. Serve the chicken over the rice, and drizzle the vinaigrette on top.
