Chewy Chocolate Chip Cookies

Ingredients

  • 1 cup flour (reduce by 1/4 cup if you wish to include protein powder)
  • 1 scoop protein powder (optional - reduce flour by 1/4 cup)
  • 2 teaspoon cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup NuNaturals NuStevia Sweetenerâ„¢ Stevia Baking Blend, or their MoreFiberâ„¢ Baking Blend
  • 1/4 cup canola oil
  • 1 teaspoon vanilla
  • 1/2 teaspoon mint extract (optional)
  • 1/4 cup miniature semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350 degrees F.
     
  2. Lightly spoon flour into a dry measuring cup and level with a knife.
     
  3. Combine flour, (protein powder, if using), cocoa, baking powder, and salt, stirring with a whisk.
     
  4. Place Stevia Baking Blend & oil in a large bowl; beat with mixer at high speed until well blended. Add vanilla and mint (if using), beat well.
     
  5. With mixer on low speed, gradually add flour mixture. Beat just until well combined, then fold in chocolate chips.
     
  6. Drop by tablespoonfuls 2 inches apart onto sprayed baking sheets.
     
  7. Bake10-12 minutes or just until set.
     
  8. Remove from oven & cool on pan for 5 minutes.
