No Fuss Bisquick Casserole

Ingredients

  • 4 zucchini, thinly sliced
  • 1/4 cup light vegetable oil
  • 1 cup Egg Beaters
  • 1 cup onion, chopped
  • 1 can diced green chilies
  • 1/2 cup reduced fat Parmesan cheese, grated
  • 1/2 cup Heart Smart Bisquick
  • 1 teaspoon seasoning salt
  • 1/4 teaspoon black pepper, freshly cracked

Instructions

  1. Preheat oven to 350 degrees F.  Spray an 8x8-inch baking pan with cooking spray.
     
  2. In a large bowl, stir together the zucchini, oil and liquid egg substitute. Add onion, chiles, cheese, Bisquick, seasoning salt, and black pepper, combining well.
     
  3. Pour into prepared pan and bake in preheated oven for 30 minutes. You can cover with foil if browning too quickly. Cut into squares to serve.
