Morning Mojo

This is one of the best healthy casserole recipes out there. Formerly the No Name Casserole, the name "Morning Mojo" was thought up by Linda Myers of Denver, Missouri as part of our "Name This Recipe" contest.

Ingredients

  • 2 tablespoon margarine or butter
  • 1 cup onion, chopped
  • 8 eggs, scrambled
  • 1/3 cup skim milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried parsley flakes
  • 1/4 teaspoon dried rosemary, crushed
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon dried mustard
  • 1 cup turkey sausage, browned and well drained
  • 1 cup reduced fat Cheddar cheese, shredded

Instructions

  1. In a pan over medium-high heat, combine the butter and onion. Cook until butter melts and onion is translucent, stirring frequently.
     
  2. In a mixing bowl, combine eggs, milk, salt, parsley, rosemary, cayenne, mustard and cheese. Beat until well blended.
     
  3. Add the butter, onions and sausage to the mixing bowl, stirring to combine. Pour into a 13 by 9-inch baking dish with butter and onion.
     
  4. Bake uncovered at 350 degrees F for 40 minutes, or until the eggs have begun to set.
