Low-Carb Loaded Cauliflower Casserole

Cut out the carbs with this Low-Carb Loaded Cauliflower Casserole. Made with sour cream, Cheddar cheese, and bacon, this casserole has the delicious flavor of a loaded baked potato. However, unlike a baked potato, the cauliflower base is much better for you. You can have a full serving without feeling weighed down. We suggest you make this cauliflower casserole as a light dinner or a yummy side dish. This casserole would also be perfect to bring to potlucks, family gatherings, or office parties. Your friends and family won't be able to get enough of it.

Ingredients

  • 2 pound cauliflower
  • 1 cup low-fat sour cream
  • 1 1/2 cup 2% fat shredded Cheddar cheese, divided
  • 3 green onions, thinly sliced
  • 2 strips thick bacon, coarsely chopped
  • salt and fresh ground black pepper

Instructions

To Make the Casserole

  1. Preheat oven to 350 degrees F.  Spray a 3-quart baking dish with cooking spray.

  2. In a non-stick fry pan, cook the bacon until crisp, then drain well on paper towels and chop coarsely.

  3. Cut core out of the cauliflower and chop into small florets. Bring a large pot with 3-inches of water to a boil. Place cauliflower into a steamer basket and cook, covered, over the boiling water for about 10 minutes or until very soft.

  4. In a large bowl, combine the sour cream, 1 cup of the Cheddar cheese, half of the green onions, and half of the bacon. Add the cooked cauliflower and toss well. Sprinkle lightly with salt and pepper and spoon into the prepared baking dish. Top with the remaining cheese.

  5. Bake about 25 minutes until hot and bubbly. Sprinkle with remaining green onion and bacon. Serve warm.
