Dollar Store 7 Layer Casserole

As it turns out, you can use dollar store food to make healthy casserole recipes that the whole family will love. Plus, this Dollar Store 7 Layer Casserole recipe only features low fat vegetarian food items. For the maximum visual appeal, serve this healthy recipe in your best glass baking dish.

Ingredients

  • 2 can (15 ounces) black beans, drained and rinsed well
  • 2 tablespoon garlic, minced
  • Black pepper, to taste
  • Dried basil, to taste
  • 1 can (27 ounces) spinach, drained and rinsed well
  • Lemon pepper, to taste
  • 2 can (15 ounces) red kidney beans, drained and rinsed well
  • 3 tablespoon spicy brown mustard
  • 1 jar (12 ounces) banana peppers, drained and rinsed well
  • 1 jar (8.3 ounces) jalapeno peppers, drained and rinsed well
  • 2 teaspoon ground ginger
  • 1 can (15 ounces) pinto beans, drained and rinsed well
  • 1 can (15 ounces) white beans, drained and rinsed well
  • 1/2 tablespoon ground cumin
  • 2 teaspoon paprika
  • 1 can diced tomatoes, drained
  • 1 jar (16 ounces) salsa
  • 2 cup peanuts (I used dry roasted and unsalted peanuts)

Instructions

  1. Preheat your oven to 375 degrees F. Spray your largest casserole dish (I used a deep Dutch oven) with nonstick cooking spray.

  2. Combine the black beans with the minced garlic, black pepper and dried basil. Place the black bean mixture at the bottom of the casserole dish to form the first layer.

  3. Combine the canned spinach with lemon pepper. Place on top of the black bean mixture to form the second layer.

  4. Mix together 2 tablespoons of the mustard with the red kidney beans, and place into the baking dish to form the third layer.

  5. Combine the banana peppers, jalapeno peppers and ginger. Place this mixture into the baking dish to form the fourth layer.

  6. Combine the pinto beans, white beans, cumin and paprika. Evenly place this mixture into the baking dish to form the fifth layer.

  7. Combine the diced tomatoes with the salsa and the remaining brown mustard. Evenly place this mixture into the baking dish to form the sixth layer.

  8. Sprinkle the peanuts over the top of the casserole to form the seventh layer.

  9. Bake the casserole at 375 degree F for 30 minutes, or until everything is full warmed through.
