  • 1 medium yellow onion, peeled and chopped
  • 1 each yellow, orange and red pepper, seeded and chopped
  • 8 ounce mushrooms, wiped clean and coarsely chopped
  • 8 ounce lean ground beaf
  • 8 ounce Italian sausage, casings removed
  • 3 whole zucchini, sliced lengthwise into 1/4-inch slices
  • 1 (6-ounce) can tomato paste
  • 1 (14-1/2-ounce) can diced fire roasted tomatoes, drained
  • 3 ounce baby spinach
  • (16-ounce) cottage cheese
  • 1 egg
  • 2 tablespoon chopped fresh Italian flat-leaf parsley
  • (12-ounce) deli sliced Provolone cheese
  • (12-ounce) mozzarella ball, sliced
  • 3 ounce shaved Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
