Ingredients

  • 5 pound stewing chicken, cut up with excess skin and fat removed
  • 1 1/2 pound extra lean beef stew meat
  • 1/4 pound extra lean pork, cubed
  • 1/2 pound dried Navy beans, soaked overnight
  • 1/2 pound split green peas
  • 2 cup canned whole tomatoes
  • 4 cup carrots, diced
  • 2 1/2 cup onions, diced
  • 3 cup celery, diced
  • 1/2 lemon, peeled and cut into pieces
  • 8 cup potatoes, diced
  • 4 cup cabbage, shredded
  • 4 tablespoon butter substitute
  • Salt and pepper, to taste

Instructions

  1. Put cut-up chicken, beef and pork in a large pot. Cover with cold water. Slowly bring to a boil. Skim, then simmer one hour.
     
  2. Add drained Navy beans, green peas, tomatoes, carrots, onions, celery and lemon. Cook about three hours.
     
  3. Add potatoes, cabbage, butter, salt and pepper. Simmer 30 minutes.
